Am here with my one pot meal again! Here I present the scrumptious Tomato Rice recipe!!
I have already posted thakkali sadam recipe, this is another version of tasty tomato rice! The main difference between the two versions is that the first one is more like pulao. You even call it as thakkali pulao! Tomatoes and spices would be cooked together with rice just as we do for any pulao.
This version is more like a variety rice! We cook rice and the tomato separately and then mix them. I love both the versions and both are easy to prepare too!
Ingredients:
Tomatoes: 4-5 (medium sized)
Onions: 2 (Big ones)
Green chillies: 2-3
Ginger & Garlic: 2 tsps (minced)
Cilantro: few (finely chopped)
Mint leaves: few (finely chopped)
Sesame oil (aka gingili oil): 5-6 tsps
Peanuts: handful (optional)
Cashews: handful (optional)
Hing: a pinch
Bay leaf: 1
Cloves: 2
Cinnamon: 1/2 inch stick
Red chillies: 2
Methi seeds (vendhayam): 1/2 tsp
Chana dal: 3 tsps
Urad dal: 3 tsps
salt: to taste
Note: I have used purple onions in this recipe. Cashews and peanuts are purely optional. Adding mint gives a nice flavor and appetizing smell! I usually use sesame oil (nalla yennai) just for seasoning. But in this recipe I have used sesame oil to sauté veggies too! Try it once am sure you would love this recipe!!
Preparation Method:
- Finely chop tomatoes and green chillies.
- Chop onions length wise.
- Cook rice and allow it to cool.
- Dry fry peanuts and cashews and allow it to cool.
- Heat 1 tsp of oil and fry chana dal, urad dal, red chillies, hing and methi seeds.
- Ensure that the methi seeds are not over fried, else they would leave sour taste
- Allow the fried ingredients to cool and grind into coarse powder.
- Heat remaining oil and sauté onions.
- Add cinnamon, bay leaf, cloves, ginger and garlic and fry for 1-2 minutes.
- Toss green chillies and tomatoes and fry till tomatoes turn soft/cooked.
- Add mint, salt, peanuts, cashews and the ground powder.
- Keep stirring till the powder gets mixed well and you get paste like consistency.
- Garnish with cilantro and remove from the stove.
- Add this paste to cooked rice and mix well.
- Serve with raita/papad!
